My family loves Meat balls! I don't make them very often, because they are full of sugar! I wanted a clean, healthy meat ball recipe that my kids would eat. This recipe was a success! It is full of veggies and no white sugar or high fructose corn syrup. Our favorite Meatball recipe uses Chili sauce and Grape jelly. Most grape jellies first ingredient is some type of sugar so I went with Simply fruit Black raspberry jelly. This brand uses juice to sweeten and preserve rather than all the sugar. I made a healthy chili sauce, with out all the sugar.
Meatballs in Chili and Raspberry Sauce
This is a large recipe. I only use half and freeze the rest for an easy meal later on. Start by making the Chili sauce, while simmering make your meatballs. When meat balls are done place in a crockpot. Poor half the chili sauce if you are freezing half the recipe, over the meat balls. Put the whole jar of jelly in the crockpot, cover and cook on low for 6-8 hours or high for 3-4 hours.
Chili Sauce
6 Tomatoes
1 red pepper
1 green pepper
1/2 onion
1/4 cup honey
1/4 cup apple cider vinegar
1/4 cup cloves
1/4 tsp. cinnamon
1/4 tsp. cloves
1/4 tsp. nutmeg
Dice tomatoes, peppers and onions. Place diced tomatoes, peppers and onions and all other ingredients in a pot. Bring to a boil over medium heat. Let simmer for 45 minutes. Use an immersion blender if you want a smooth sauce, not necessary.
Meatballs
2 lbs. ground beef
2 lbs. italian sausage
1 diced onion
2 cups spinach chopped
4 eggs
1/2 tsp parsley
1/2 tsp onion powder
1/2 tsp garlic powder
2 Tbs. Worcestershire sauce
2 Tbs. red wine vinegar
Mix all ingredients in a large bowl. Roll in to balls, place on baking sheet. Bake at 350 for 20 mins.
