Veggie Curry Soup

This is a perfect lunch on a cold winters day! It is bursting with flavor and spices. I love anything curry!
Veggie Curry Soup
Ingredients:
1 tbs olive oil
2 cloves garlic minced
1/4 cup chopped onion
1 tbs. mined ginger
3 cups chicken stock
1 can coconut milk
2 tbs red curry paste
1 tbs curry powder
1 cup cauliflower florets
1 red pepper diced
2 carrots chopped
3 yukon gold potatoes sliced

Directions:
place oil, ginger and onions in a large pot. cook 2 mins add chicken stock and curry paste and powder. add veggies and potatoes and boil till veggies are tender. and coconut milk and mix. Top with lime and cilantro.
