Apple Cinnamon Protein Pancakes

There is never a left over pancake when I make these! My kids love them and they are a perfect combination of protein fruit and carbs!
Apple Cinnamon Protein Pancakes
Ingredients:
1 cup cottage cheese
4 eggs
1 cup apple sauce
1 cup gluten free flour(I use a mix of brown rice, white rice, tapioca and potato starch)
 or 1 cup gluten free oats
1 tbs cinnamon
1 tps vanilla
dash of salt

Directions: place all ingredients in blender till smooth. cook on a pancake griddle, I use coconut oil on the griddle to keep them from sticking. I drizzle honey and sprinkle with cinnamon. If I am in a hurry I just roll them up and eat them plain. they are delicious by themselves!
