Pumpkin Protein Waffles

I feel like every family needs to know about these, you are missing out if you do not have these waffles in your life. My kids devour them every morning. I need a couple more waffle irons to keep up with them, there is always fighting going on about who gets the next waffle. 

Pumpkin Protein Waffles

8 eggs
2 cup cottage cheese
2 cup gf flour or oats
1 15 Oz can pumpkin puree
2 tsp. Cinnamon
2 tsp pumpkin pie spice
2 tsp vanilla
Blend all ingredients in a blender till smooth. I use a Blendtec, if you have a smaller blender, I would make it in 2 batches.  Cook in a waffle iron, Throw a few chocolate chips in it and its like a cookie! Top them with fresh berries, cream, maple syrup, nuts, the options are endless.

Pumpkin German Pancakes

Pumpkin German Pancakes! Yes please!
6 eggs
1 1/2 cup GF flour or oats
1 1/2 cup unsweetened almond milk
1 cup of pumpkin
1 tsp vanilla
1 tsp cinnamon
1/2 tsp pumpkin pie spice
Blend all ingredients in a blender for 30 seconds. Pour into 2 greased 9 x 13 pyrex pans. Bake at 400 for 15 to 20 minutes.

Pumpkin Cookies

I LOVE Pumpkin!!!! I love Fall!!! My friend Liz makes the best pumpkin cookies. I miss those yummy cookies, so I decided to clean them up and make them Gluten free. They are delicious!

Healthy Gluten free Pumpkin Cookies

1/2 cup coconut oil
1/2 cup honey
1 egg

2 1/2 cups gluten free flour mix
1 tsp. Nutmeg
1 1/2 tsp cinnamon
1 tsp vanilla
1 tsp baking soda
1/2 tsp salt

1 small can of pumpkin 15 oz
1 cup dark chocolate chips


Mix all ingredients. I use a 1 inch cookie. Place on parchment or wax paper. They don't rise so they can be fairly close to each other. Bake at 350 for 15-20 minutes.

Paleo take 23-30 minutes

ATK Gluten free Flour Mix
4 1/2 cups + 1/3 cup whit rice flour
1 2/3 cup Brown rice flour
1 1/3 cup potato starch
3/4 cup tapioca starch
3 Tbs dry milk powder

I get all these ingredients in the bulk section at Winco and the potato starch at Sprouts.

Paleo Pumpkin Cookies

Everything else is the same just use:
4 eggs instead of 1
2/3 cup coconut flour in place of Gluten free flour

Paleo Pumpkins Muffins

Paleo Pumpkin Muffins
1/2 cup coconut flour
1/4 tsp. Salt
1/4 tsp. Baking soda
1/2 tsp. Cinnamon
1/2 tsp. Pumpkin pie spice
4 eggs
1/3 cup honey
1/4 cup coconut oil
3/4 cup pumpkin
Optional, but highly recommended:
Handful of pecans
Handful of raisins or chocolate chips
Mix all ingredients. Bake at 350°. I use mini muffin tins and it takes 15-20 min.





I am a little obsessed with coconut! I love coconut flour, oil, milk, cream and flakes. Love these muffins, and so do my kids! They are packed with protein and fiber and no processed sugar!
