Zoodles Lo mein

I love zoodels!!! I have the cool spiralizer and it is the bomb!This recipe is quick and easy.

Zoodles Lo Mein
Ingredients:
2 cloves garlic minced
1 tsp minced ginger
1 tsp sesame oil
1 tbs coconut oil
1 carrot julienned
1 celery stick julienned
1 pepper sliced (red, orange, yellow)
1 zucchini spiralized
1 tbs. liquid aminos or coconut aminos, or soy sauce

Directions:add oils to pan with ginger and garlic. saute till fragrant. add peppers, carrots and celery. When veggies are tender add zucchini and aminos and toss to coat zoodles. I I have left over chicken I will slice it and add it when I add the veggies.

Loaded Taco Sweet Potato

This is so yummy! Taco night just got better! This is a great paleo, gluten free option.

Loaded Taco Sweet potato
Ingredients:
1 lb Chorizo or ground meat with Taco Seasoning (Sprouts has the best Chorizo, paleo friendly)
2 baked sweet potatoes
1 green pepper sliced
1 yellow, red or orange pepper sliced
1/2 an onion sliced
1 can of olives sliced for topping

Directions:
Brown your meat in a pan. remove from pan and saute onions and peppers. Cut sweet potatoes in half, load ea half with meat, add onions and peppers, top with olives and taco sauce or fresh pico.

Dutch Baby

For FHE last night our dessert was this yummy Dutch baby. And it was Gluten Free and no one knew! Mark went back for seconds!

Dutch Baby
Ingredients:
fruit of your choice (I used a can of peaches and fresh raspberries)
1 tbs. butter
2 cups Pamelas pancake mix
2 eggs
1 1/2 cups water
1/4 cup brown sugar

Directions:
Preheat oven to 375
melt butter in a cast iron skillet
cover the bottom of skillet with fruit
mix eggs, pancake mix, water and sugar together then pour over the fruit
Bake for 15-20 mins, till golden brown

Apple Pie Rice Cereal

Breakfast is a struggle for me. I can't do eggs very much, pregnancies have killed eggs for me. brown rice is about the only grain I can eat. So today was Brown rice cereal, and it was yummy!

Apple Pie Rice Cereal
Ingredients:

  • 1/2 granny smith apple diced
  • rice cereal (I grind brown rice in my blend tec)
  • 1/2 tsp cinnnamon
  • 1 tbs walnuts or pecans
  • 1 tsp. cocnut oil

Directions:

  1. In a pot over medium heat add a tsp. coconut oil.
  2. add the diced apples
  3. add 1 tbs. walnuts or pecans
  4. add 1/2 tsp. cinnamon
  5. stir till apple is at tender or desired softness
  6. add 1cup water
  7. add 1/4 cup brown rice cereal
  8. stir till it thickens
  9. Enjoy

Whole 30 Cookbook

My mom got the Whole 30 cookbook and she loved it. She made it through the 30 days and feels great. She made dinner for the Family and all the recipes were a hit. My favorite is the Chicken Chowder recipe and Balsamic roasted sweet potatoes and Brussels sprouts.I love cooking whole 30 because they are yummy recipes that are real food and full of nutrients. I am always weary to buy cookbooks. did you know you can rent them from the library! Test out some recipes before you buy the book!
