Zucchini Sweet Potato Cakes

If your counter is overflowing with those garden zucchinis, this recipe makes a nice breakfast and will clear you some counter space!

Zucchini Sweet Potato Cakes
2 cups grated zucchini(once grated squeeze out all the juice)
2 cups grated sweet potato
2 eggs
1/2 tsp garlic powder
1/4tsp salt
1/4 tsp pepper
1 tsp parsley

Directions: Mix all ingredients together in a bowl till combined. Heat butter, oil or coconut oil in a pan. Make four balls with the mixture. Smash them and place them in the pan, I cooked them for 10 mins. I like mine crispy and thin. Keep rotating them, as they cook so they don't burn on one side.
