Pineapple Coconut Curry

I love curry! I am always looking for a good curry! I loved the pineapple in this recipe! I think next time I will try with mangoes. So,I am not a cauliflower person. I know, how can you be paleo and not like cauliflower. I have tried it as a rice substitute, because curry without rice is just sad. But I still haven't found a Paleo rice I love. So instead I chopped up some zucchini and threw it in there.












Pineapple Coconut Curry
2 large chicken breast
2 Tbs. coconut oil
2 tsp. minced ginger
2 cloves minced garlic
1/4 cup diced onion
1 can coconut milk
1 24 oz. can of pineapple drained-save the juice
2 tsp. red curry paste
1 tsp. tandoori paste
salt to taste

Directions:
Cut up chicken into bite sized pieces. Saute coconut oil, garlic, ginger, onion and chicken till chicken is almost done. Add 1/8 cup pineapple juice, curry and tandoori paste stir in. Then add the coconut and the pineapple and simmer for 15 mins.
