I may have a slight obsession with paleo muffins! They are so yummy and my kids love them! They are getting protein, fiber and a good source of fat when they eat them. They make a great snack! You can't stop popping them in your mouth, when you make them mini!Paleo Almond Joy Muffins
1/4 cup coconut flour
1/4 cup cocoa powder
1/4 tsp. salt
1/4 tsp. Baking soda
4 eggs
1/4 honey
1/4 cup coconut oil (sometimes I use butter)
1/4 cup unsweetened coconut flakes
1/4 cup chopped almonds
Mix ask ingredients in order. If the batter looks thick and dry add some coconut milk or almond milk for moisture. I use a mini muffin pan, scoop in 3/4 full. Bake at 350° for 15-20 min.
