If your counter is overflowing with those garden zucchinis, this recipe makes a nice breakfast and will clear you some counter space!
Zucchini Sweet Potato Cakes
2 cups grated zucchini(once grated squeeze out all the juice)
2 cups grated sweet potato
2 eggs
1/2 tsp garlic powder
1/4tsp salt
1/4 tsp pepper
1 tsp parsley
Directions: Mix all ingredients together in a bowl till combined. Heat butter, oil or coconut oil in a pan. Make four balls with the mixture. Smash them and place them in the pan, I cooked them for 10 mins. I like mine crispy and thin. Keep rotating them, as they cook so they don't burn on one side.

My family is obsessed with Waffles. Let's be honest, the obsession started with me. Waffles are my fave and I want them to be packed with protein and not just carbs, I want them to be delicious without syrup. Because I want abs!
Here are our favorites:
These cashew waffles are AMAZING! The texture is perfect and you would never know they were made with cashews! They are from Against All Grain
Paleo Banana waffles.These are naturally sweet and my kids love a few chocolate chips thrown in.
Paleo Banana waffles
4 Bananas
8 eggs
1/2 cup nut butter
2 tsp cinnamon
Dash of nutmeg
Tsp vanilla
Pinch of salt
5-6 Tbs of coconut flour.
Blend all ingredients in a blender and blend till smooth. Cook on greased waffle iron.
Try out a waffle with 5 Tbs and if they hold together you are good. Add more if they fall apart. They are still delicious if they fall apart.
Pumpkin Protein Waffles
8 eggs
2 cup cottage cheese

1 15 Oz can pumpkin puree
2 tsp. Cinnamon
2 tsp pumpkin pie spice
2 tsp vanilla

Transformation Tuesday: Brazil Butt Lift
Chelsey had been struggling to lose weight after having her son. After seeing her weight fluctuate throughout her life, she was ready for a healthy, lasting lifestyle change. She tried Brazil Butt Lift and lost 21 pounds and 15.1 inches! Read how she did it in her own words below:
I have struggled with my weight my whole life. I have been 100 pounds at my lightest and 180 pounds at my heaviest. After my son was born, I was very ashamed of my body. I didn’t even want to leave the house. I was too ashamed to go to the gym, so a friend of mine lent me her Brazil Butt Lift DVDs. I fell in love with the program and purchased it for myself. My goal was to pick my butt up off the ground! Pregnancy gave me a very saggy butt. I needed to add some muscle.
Brazil Butt Lift was so challenging at first but fun at the same time. The workouts were just fun! I feel like anyone can do them, and they are a great starting point for people who have never worked out before. Plus, Leandro is a hoot. He makes you feel like you’re at a dance party. He’s for sure my favorite Beachbody trainer.
I found my results came quickly! In just the first 3 weeks, I saw a dramatic change. Both my butt and thighs had the best results. After finishing Brazil butt Lift, I moved on to the Brazil Butt Lift’s Master’s Series. I was hooked!
Having used Brazil Butt Lift and getting such a great transformation, I was inspired to reach for the stars and not only lose my baby weight, but keep going and become the fit mom I knew I could be. Going through numerous tragic events caused her weight to drastically fluctuate, but it was words from her daughter that inspired her to make a lifestyle change for herself and her family. In two rounds of PiYo, she lost 35.2 pounds and 26.25 inches! Read her amazing story in her own words below:
I had been overweight since I was born — I remember being almost 150 pounds by the time I was 10. I eventually went through so much verbal abuse from kids at school that I turned to anorexia when I was 16. I was down to around 110 pounds, and at 5’8″, I was so thin and completely unhealthy. After a year of putting my body through that, I turned back to food for support. I gained everything back and was close to 200 pounds. After college, tragedy struck my life in the worst way. In a matter of 6 months, I had lost my son, my father, and my husband and I divorced. So again, I turned to food. I was steady around 190 pounds all through my second marriage, and after the birth of both of my girls, I was around 220 pounds. I was disgusted with myself.
One day, my kids took a picture of me and my 3-year-old said, “Mommy’s a monster.” That was enough to change my lifestyle and habits, so I ordered PiYo. I had no experience, and this was all new. I’ve always been very weak, so PiYo seemed like it was going to give me strength without jumping and hopping around.
I love how PiYo has transformed my entire body! I’m strong and lean! Everything on a day to day basis has gotten so much easier to do. I can now do pushups and pullups. I challenge everyone to contests now — and I win! I feel so much more flexible every time I do PiYo.
Now, I love being me. I’m proud to be a mommy of 2 precious girls, and I’m showing them what a real woman can do when she decides to change her life. I’ve never been so energized and confident. This summer will be the first ever that I wear a bikini!
PiYo has honestly made me a better person. It’s made me a better mom, a better wife, and a better me. My whole family now understands what it takes to be healthy, and my girls are so proud of mommy. This transformation will have a lasting impact on my children, and I am forever grateful.

Apple Cinnamon Protein Pancakes
There is never a left over pancake when I make these! My kids love them and they are a perfect combination of protein fruit and carbs!
Apple Cinnamon Protein Pancakes
Ingredients:
1 cup cottage cheese
4 eggs
1 cup apple sauce
1 cup gluten free flour(I use a mix of brown rice, white rice, tapioca and potato starch)
or 1 cup gluten free oats
1 tbs cinnamon
1 tps vanilla
dash of salt
Directions: place all ingredients in blender till smooth. cook on a pancake griddle, I use coconut oil on the griddle to keep them from sticking. I drizzle honey and sprinkle with cinnamon. If I am in a hurry I just roll them up and eat them plain. they are delicious by themselves!

End of Exercise
Dennise P. was feeling depressed and lacked energy to play with her son. She had heard about CIZE from a colleague, but put off ordering it. I was depressed, had no energy, and my 3-year-old was suffering because mommy was too tired to play. I was always grumpy with my husband and things were just going downhill for us.
On the first day, I had a little frustration. It was difficult to keep up. I took more than 5 breaks on the first and second days. On my third and fourth days, I was doing much better. Now I love it… I always feel great, full of energy and if I ever feel down, I just dance my emotions away. Best cure ever!
My favorite workout is Full Out! That’s a beast! I love Chandelier, but I’m really slow at it, and hoping to get better soon! I like that I never get sore. I sweat like a pig, but I don’t get sore and that is extremely important for me. I can do CIZE every day of the week and still feel amazing. That is very good for me because I’m a massage therapist and the main reason I never wanted to do exercise was because I was avoiding to get more sore or injure myself and not be able to work.
My favorite thing about Shaun T is his voice talking to me. It is like he has all the patience in the world, and he is just waiting for me to get it. He sings his instructions and makes everything so smooth. Before starting CIZE, my dance skills were really bad! After completing CIZE, my dance skills are good!
I used CIZE for the first 30 days, and a hybrid of CIZE & 21 Day Fix for two more weeks. I lost 6 pounds in my first week, and my husband was so impressed with my results and my mood change that he ordered his own challenge pack. Now we are both coaches and on our way to being fit and healthy again. I have lost 20 pounds in less than 60 days, and I still have 50 more pounds to go! I can’t wait to see my final results!

Chile Lime Salmon
4 salmon fillets
2 limes
2 tps. chili garlic paste
salt and pepper
Directions:
squeeze the limes and add the chili paste and mix. Coat the fillets and let marinate for 1/2 hour.
Grill chicken, or pan sear it. time varies depending on thickness of fillets. You can see when the fish becomes a lighter pink its done.I like to let the outside get crispy. I use coconut oil spray to keep it from sticking.

1 tbs. mined ginger
3 cups chicken stock
1 can coconut milk
2 tbs red curry paste
1 tbs curry powder
1 cup cauliflower florets
1 red pepper diced
2 carrots chopped
3 yukon gold potatoes sliced
Directions:
place oil, ginger and onions in a large pot. cook 2 mins add chicken stock and curry paste and powder. add veggies and potatoes and boil till veggies are tender. and coconut milk and mix. Top with lime and cilantro.

1 tbs coconut oil
1 carrot julienned
1 celery stick julienned
1 pepper sliced (red, orange, yellow)
1 zucchini spiralized
1 tbs. liquid aminos or coconut aminos, or soy sauce
Directions:add oils to pan with ginger and garlic. saute till fragrant. add peppers, carrots and celery. When veggies are tender add zucchini and aminos and toss to coat zoodles. I I have left over chicken I will slice it and add it when I add the veggies.

1 lb Chorizo or ground meat with Taco Seasoning (Sprouts has the best Chorizo, paleo friendly)
2 baked sweet potatoes
1 green pepper sliced
1 yellow, red or orange pepper sliced
1/2 an onion sliced
1 can of olives sliced for topping

Brown your meat in a pan. remove from pan and saute onions and peppers. Cut sweet potatoes in half, load ea half with meat, add onions and peppers, top with olives and taco sauce or fresh pico.

Dutch Baby
For FHE last night our dessert was this yummy Dutch baby. And it was Gluten Free and no one knew! Mark went back for seconds!
Dutch Baby
Ingredients:
fruit of your choice (I used a can of peaches and fresh raspberries)
1 tbs. butter
2 cups Pamelas pancake mix
2 eggs
1 1/2 cups water
1/4 cup brown sugar
Directions:
Preheat oven to 375
melt butter in a cast iron skillet
cover the bottom of skillet with fruit
mix eggs, pancake mix, water and sugar together then pour over the fruit
Bake for 15-20 mins, till golden brown

fruit of your choice (I used a can of peaches and fresh raspberries)
1 tbs. butter
2 cups Pamelas pancake mix
2 eggs
1 1/2 cups water
1/4 cup brown sugar
Directions:
Preheat oven to 375
melt butter in a cast iron skillet
cover the bottom of skillet with fruit
mix eggs, pancake mix, water and sugar together then pour over the fruit
Bake for 15-20 mins, till golden brown

Apple Pie Rice Cereal
Breakfast is a struggle for me. I can't do eggs very much, pregnancies have killed eggs for me. brown rice is about the only grain I can eat. So today was Brown rice cereal, and it was yummy!

Apple Pie Rice Cereal
Ingredients:
- 1/2 granny smith apple diced
- rice cereal (I grind brown rice in my blend tec)
- 1/2 tsp cinnnamon
- 1 tbs walnuts or pecans
- 1 tsp. cocnut oil
Directions:
- In a pot over medium heat add a tsp. coconut oil.
- add the diced apples
- add 1 tbs. walnuts or pecans
- add 1/2 tsp. cinnamon
- stir till apple is at tender or desired softness
- add 1cup water
- add 1/4 cup brown rice cereal
- stir till it thickens
- Enjoy
